What They're Looking For.
Must Have
7–10 years of culinary leadership experience, Experience managing therapeutic diet production, Experience managing texture-modified diets, ServSafe Certification
Nice to Have
3–5 years in healthcare, senior living, rehabilitation, or skilled nursing culinary operations, Experience with IDDSI standards, Experience with healthcare tray line systems, Experience with regulatory compliance, Experience in upscale dining, Experience in catering, Experience in café operations, Experience in special event programming, Experience leading large culinary teams in a high-volume environment, Culinary degree or formal culinary training

Lead back-of-house culinary operations
Support campus-wide culinary initiatives
Oversee culinary production
Ensure healthcare diet compliance
Manage food safety systems
Maintain kitchen sanitation
Ensure regulatory readiness
Ensure meals are produced safely
Ensure meals are produced efficiently
Ensure meals are therapeutically correct
Serve meals at highest quality standards
Direct and oversee culinary production
Ensure meals prepared according to therapeutic diet orders
Ensure meals prepared according to physician orders
Ensure meals prepared according to resident preferences
Ensure meals prepared according to IDDSI standards
Oversee production and execution of regular diets
Oversee production and execution of texture-modified diets
Oversee production and execution of pureed diets
Oversee production and execution of mechanical soft diets
Oversee production and execution of renal diets
Oversee production and execution of diabetic diets
Oversee production and execution of low sodium diets
Oversee production and execution of allergy-sensitive meals
Oversee production and execution of thickened liquid requirements
Ensure accurate tray assembly
Ensure accurate portioning
Ensure accurate meal ticket accuracy
Ensure timely meal delivery
Maintain proper food temperatures
Maintain resident safety
Maintain consistency in food quality
Maintain consistency in flavor
Maintain consistency in presentation
Maintain consistency in nutritional integrity
Monitor and enforce HACCP procedures
Monitor and enforce cooling logs
Monitor and enforce reheating standards
